100% birch sap
Birch syrup is made of 100% birch sap. We boil it in a wooden oven until water evaporates and sugars caramelize. In taste, it reminds a bit of Italian balsamico but it's more complex and flavorful and we make it of pure and local Latvian traditional wild food - birch sap.
